Halloween stuffed peppers with mince and mozzarella

Happy Halloween! I’ve been wanting to make a brand new Halloween recipe this year, and only managed to come around to it this morning but I couldn’t be happier with the result! It’s so much fun carving out those little peppers and giving them funny faces. It’s an incredibly easy recipe, takes no time to make at all but the result is really cute and tasty – and great encouragement for kids to eat their veggies (peppers in this case but you can always add more veggies inside with the mince too of course).

I only used a handful of ingredients: peppers, mince, egg, breadcrumbs and mozzarella cheese, which melts over our mince and turns into gooey brains – amazing! You can make this recipe vegetarian as well, by changing the mince into couscous with a little bit of tomato sauce for example or with fresh veggies instead of tomato sauce.

Ingredients

  • 450g mince - I used a mixture of veal and pork, but you can also use pork or pork & beef
  • 1 large egg
  • 75g dried Panko breadcrumbs
  • 3 orange peppers
  • 125g mozzarella
  • Optional: serve with black spaghetti

Preparation

Preheat the oven to 180 °C Fan

Carefully slice off the top of the peppers, remove the core from the bottom and make sure you scrape out all the seeds from both the top and the bottom.

Cut out the eyes, nose (optional) and a cheeky creepy grin (I can highly recommend giving it a tooth)

Mix the mince with egg and breadcrumbs. If it's not seasoned already you can add salt, pepper and thyme and mix it in too.

Stuff the peppers with the mince.

Slice the mozzarella into 3 equal parts and place each slice on top of a pepper.

Place in the oven for 15 minutes without the pepper tops, then turn up the heat to 200 °C, add the pepper hats onto the tray (no need to place them on top of the mince) and cook for another 5-7 minutes.
