Cod fillet coated in tomato paste with tomatoes and zucchini in the oven

Casseroles are usually a perfect thing to make on a busy evening as they don’t take up a lot of preparation time and you can sit down and relax while your oven does all the work. This recipe is definitely one of those easy casseroles. It’s also perfect for someone who is just learning how to cook and combine flavors!

Now, putting tomato paste on top of fish is not something that may seem like it not makes a lot of sense, but my mom did this once before and I really liked it a lot, plus, it also goes really well with courgette so give it a try and let me know what you thought of it!

Serves: 2 people

Ingredients

  • 200g tagliatelle
  • 2 cod fillets
  • 1 small courgette
  • 1 large onion
  • 2 tomatoes
  • 70g tomato paste
  • pepper, salt, oregano, thyme
  • olive oil

Products I used: Elvea’s double concentrated tomato paste, Cod fillets from Albert Heijn

Preparation

Cut your onion in small pieces and the courgette in small cubes. Heat some olive oil and fry the courgette and onion in a pan for about 5 minutes. Take out a casserole and add your freshly cooked veggies in it. Slice up the tomato and layer on top of your onion and courgette. Sprinkle some oregano and thyme all over, about a teaspoon of each should do it.

Season your cod fillets with pepper and salt, then spread a layer of tomato paste and put the cod – tomato side facing down – on top of our veggies.

Put the dish in the oven for about 25 minutes at 200°C, while you cook your pasta. Sit back and relax and enjoy this delicious cod once it comes out of the oven.
