As much as I love cooking, I get really frustrated sometimes when trying to get a photo right. And this recipe’s photo was a killer, I’ll tell ya. No matter what I did, I just wasn’t pleased with any of the photos.. until I told myself that it should be about the food, not the photos, especially since this really is a no-fuss dinner that you can cook for an entire family without having to work for longer than 5 minutes so it seemed kind of stupid to spend hours trying to photograph it. I’ve made this recipe a couple of times for different people and everyone simply loved it! When you bake redfish in the oven, it gets really soft and will melt in your mouth along with the cheddar: divine! I prefer to serve the fish with some pasta, but feel free to serve it with whatever you want.
Serves: 4 people
- 4 redfish
- 4 tomatoes
- 1 cube of fish broth
- 2,5 dl cream
- 4 tablespoons of fresh parsley
- cheddar slices
- 400g pasta
I can’t really tell you how many slices of cheddar you’ll need, it’ll depend on the size of the fish. You have to make sure every piece of fish is covered so for me it was 3 slices for each fish, because the slices were rather small.
It’s very easy to prepare this dish, you only need a few minutes to get everything ready and anything else is just a matter of layering. It’s really ideal to make this after you come home from work or are tired from studying!
All you have to do is cut the tomatoes in slices and arrange to oven dish like this:
Put the fish on the bottom, next you put the cheddar and then the tomatoes. Crumble the broth cube over the tomatoes and pour the cream onto the whole thing. Top if of with the parsley and pop it in a preheated oven at 200° for about half an hour and serve it with some pasta.
