Homemade tartar sauce

Because tartar sauce has such a special taste to it, it can be very disappointing when you buy ready made tartar sauce and it turns out to be just mayonnaise with an extra flavor to it, rather than being its own sauce. So to avoid future disappointment, I’ve created my own tartar sauce to go along with, for example, fish and chips.

I made a few versions before I was finally happy with the result, because the first one was an absolute disaster to be honest. I used an egg (based on the advice I found in recipes by some chefs), lots of capers and chives and added the mayonnaise at the very end, and I ended up with an nasty & lumpy sauce that was in no way good enough at all. I removed the egg and balanced out the capers and added all the ingredients at once and gave it another go. It tasted so much better but was still a bit too much to handle for some people so I ended up adding some extra mayonnaise. The best thing about this recipe is that it’s all in your hands. You can add more mayo if you prefer it to be milder, or you can add more of the other ingredients if it’s not rich enough for you yet.

Homemade tartar sauce

Serves: 4 people
Makes: just over 225g of tartar sauce

Ingredients

  • 2 tablespoons of fresh flat-leaf parsley (around 6 twigs, or 1 handful)
  • 225g good quality or homemade light mayonnaise
  • 1 shallot
  • 10 capers
  • 2 teaspoons of chopped gherkins/pickles
  • 1 teaspoon of dried tarragon
  • 1 tablespoon of lemon juice
  • 1/2 tablespoon of chopped fresh chives

Preparation

Easy.. Just slice the shallots up in 4 pieces and throw all the ingredients in a food processor together and mix away!

    Looks really good. In Wisconsin we have “Friday Fish Fry’s” and this would be perfect for a homemade fish fry!
