Casseroles are usually a perfect thing to make on a busy evening as they don’t take up a lot of preparation time and you can sit down and relax while your oven does all the work. This recipe is definitely one of those easy casseroles. It’s also perfect for someone who is just learning how to cook and combine flavors!
Now, putting tomato paste on top of fish is not something that may seem like it not makes a lot of sense, but my mom did this once before and I really liked it a lot, plus, it also goes really well with zucchini so give it a try and let me know what you thought of it!
Serves: 2 people
- 200g tagliatelle
- 2 cod fillets
- 1 small zucchini
- 1 large onion
- 2 tomatoes
- 70g tomato paste
- pepper, salt, oregano, thyme
- olive oil
Products I used: Elvea’s double concentrated tomato paste, Cod fillets from Albert Heijn
Cut your onion in small pieces and the zucchini in small cubes. Heat some olive oil and fry the zucchini and onion in a pan for about 5 minutes. Take out a casserole and start with a layer of onion and zucchini. You can add the tomatoes on top of the fish, or simply scatter them about in the casserole. Flavor with some oregano and thyme, about a teaspoon of each should do it, if you’re cooking for 2 people. Both techniques work perfectly! Lay your fillets on top and add some peper and salt (3 grinds of each on each fillet) Cover the top of your fillets with a layer of tomato paste, flip it over so the tomato paste side is facing down.
Put the dish in the oven for about 25 minutes at 200°C, while you cook your pasta. Sit back and relax and enjoy this delicious cod once it comes out of the oven.
